Soondooboo Jjigae
Seokkeo soondooboo. Surf and turf and silken tofu. What’s not to love. This dish probably needs no introduction:
SOONDOOBOO JJIGAE
SERVES 1-2
1 tube of silken tofu
1/4 lb or less of beef (short rib, bavette, ribeye, skirt, etc.)
2 large shrimp
3 littleneck clams
3 mussels
A few squid tentacles
1/4 medium zucchini
1-2 medium shiitake
1/4 medium onion
1 small spoonful of minced garlic
1/2 small spoonful of minced serrano pepper
Handful of scallion rings (for garnish)
A few thin slices of hot red pepper (for garnish)
1 cup rice water
1 cup myulchi yooksu
1/2 small spoonful of saewoo jeot
1 small spoonful of gochu gireum (chili oil)
1 small spoonful of mirim
1 small spoonful of fermented tuna sauce
1 small spoonful of Joseon ganjang
1 small spoonful of maesil cheong
1 small spoonful of coarse gochugaru
1 small spoonful of fine gochugaru
1/4 small spoonful of mushroom salt
